Frozen Peach Margaritas #SundaySupper

One of my favorite things about where we live is all the wildlife around us.  Birds, squirrels, skunks, ducks, deer, frogs, dragonflies, butterflies.  Every day our walk and a glance out the window is a new adventure that brings a smile to our faces no matter what else is going on.

My favorite is probably the groundhog.  Though I hate to play favorites, because they’re all adorable.  We’ve even had baby groundhogs.  If you’ve never seen baby groundhogs, you need to Google it.  So.  Freaking.  Cute.

We hadn’t seen any groundhogs in awhile, but just recently one popped out of its favorite hole in our neighbor’s front yard.  It’s kind of small and adorable and everything that is good about the world.

But not according to our neighbor.

Don’t get me wrong, though we aren’t exactly close with any of our neighbors, most of them are decent people trying to do their best just like us, including this neighbor.

And I realize some people see groundhogs as pests instead of joy.

But to fill the groundhog hole with giant sticks isn’t really cool in my book.

In fact, I’ve been upset about it all this week.  Like all week.  Every time I look at the hole and see the sticks instead of the groundhog, it breaks my heart.  I want to see the groundhog and I don’t want to live in a world in which people are mean to each other on social media and cut each other off on the highway in a constant hurry and place sticks in an innocent animal’s house.

Dad said he will remove them, we’re just waiting for the perfect moment aka when they’re not home.  #sorrynotsorry

As a reward for Dad and a pick me up for me, I made Frozen Peach Margaritas.  I knew I wanted to make them for this beverage themed Sunday Supper, but I had no idea they would turn out this good.

You have to make these margaritas this summer.  YOU HAVE TO!  They are icy cold and frozen and gluten free and kind of sort of healthy since a huge portion of them is fresh fruit. Win!  Really, though, four ingredients and a super high-powered blender kind of create magic, and real-life magic whether in the form of groundhogs and butterflies or margaritas and cake is the best kind.

Frozen Peach Margaritas #SundaySupper

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: About 5 margaritas

Ingredients

¼ cup Grand Marnier
1 cup tequila (I used Sauza because Justin Timberlake <3)
½ cup freshly squeezed orange juice
6-7 cups frozen peaches

Instructions

  1. Thaw the peaches slightly either on the counter for a good 30 minutes or in the microwave in 1 minute increments until they easily break apart but are still mostly frozen.
  2. Place the Grand Marnier, tequila, and orange juice in a high-powered blender. Add the peaches.
  3. Blend for about 1 minute until there are no large pieces of peach left. If you have a Vitamix, you will need the tamper.
  4. Serve immediately!

I look for any excuse to celebrate with friends and family in the summer.  And now, summer is in full swing, the sun is bright and hot, and the flowers are in full bloom.

But I know summer in Michigan is short lived, so I make sure to spend time enjoying it as much as is humanly possible.  This means that though I want to entertain my friends and family, I don’t want to spend a bunch of time cooped up in the kitchen, wistfully looking at the beautiful weather outside while I’m stuck inside.

However, I know all my guests expect some amazing food and drinks any time we get together.  Luckily, I find compromises that save time but leave me with outstanding dishes that everyone loves.  One of those recipes is Fresh Fruit Soda Sangria.

I love making different riffs on sangria because it’s so versatile and the quintessential summer beverage.  This version may just be my favorite.

Fresh Fruit Soda Sangria

It all begins with soda which is so fizzy and refreshing.  I can’t remember a summer without soda in my life.  Playing out in the sun on those hot days and turning to a bottle of my favorite soft drink as a cold treat.  While you could definitely just stick with soda, I made this an adult beverage by adding  some cherry vodka to complement the black cherry juice.  

If you are feeling creative, feel free to use your favorite fruit flavored vodka.  I personally love how cherries pair with soda so that was a winning combination for me.

Finally, I loaded it up with fresh fruit.  This is where you can get creative by adding any kind of fruit you like and have on hand.  I added grapes, blueberries, and some oranges.  I love that these didn’t take much time to prep before I added them, making this recipe a true summer time saver.

Fresh Fruit Soda Sangria

1 liter soda, chilled

1 cup cherry vodka, chilled

1 cup black cherry juice, chilled

1 cup green grapes, chilled

1 cup blueberries, chilled

2 small or 1 large orange, sliced or diced

Pour soda into a pitcher or punch bowl.  Add cherry vodka and cherry juice, followed by  fruit.  Stir to combine.  Serve immediately over ice, if desired.  I find if the ingredients are cold it doesn’t need ice.  Enjoy!

So my favorite football team, the Lions, didn’t make the playoffs this year … again.  But I’m still super excited for all the playoff games.  Seeing the best footballs teams face each other often leads to some great matchups.

And I would never miss the Big Game … great football, stellar commercials, and a concert?  Sign me up.

All of this football viewing needs a great cocktail.  A spicy cocktail.  Have you ever had a spicy cocktail?  I haven’t had many, but this Spicy Mango Margarita is one of my new all-time favorite cocktails.

It all starts with mango nectar, fresh lemon juice, fresh orange juice, high quality tequila, a bit of honey for sweetness and El Yucateco Green Habanero Hot Sauce that I picked up at Meijer.  It is a spicy and flavorful addition that lets the flavor of the pepper shine through, complementing it with garlic and select spices and seasonings.  It’s perfect for just about any recipe, including this margarita.  It makes the margarita a little more savory.  I can see why this is El Yucateco’s number one hot sauce.

Once I stir all these ingredients together, I add frozen mango chunks to the serving bowl.  This helps to keep the drink super cold without watering it down.  I always make sure to grab a couple extra mango chunks for my glass.  They make the best snack!  Using frozen fruit in drinks is my favorite party trick.

All of the flavors work so well together.  The mango really shines through and the margaritas aren’t too strong.  They pack a serious hit of spice, but I love that.

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 10-12 servings

Ingredients

4 cups mango juice

½ cup freshly squeezed lemon juice

½ cup freshly squeezed orange juice

¼ cup honey

2 tablespoons El Yucateco Green Habanero Hot Sauce

1 ½ cups tequila

1 16 ounce bag frozen mango chunks

Instructions

In a large serving bowl, stir together mango juice, lemon juice, orange juice, honey, Hot Sauce, and tequila. Add the frozen mango chunks, and stir to combine.

Serve immediately. Replenish mango chunks as necessary to keep the margaritas chilled during serving.

When I go out to dinner, I always order a drink. Often I am amazed at how delicious and complex restaurant drinks are. They seamlessly combine so many ingredients to create a symphony of flavors that go together perfectly.

I used to think I couldn’t recreate that type of thing at home. I used to think the same thing about my favorite restaurant dishes, but then I learned the ones that I make can be just as tasty if not more so. Once I realized this, I knew I could make some outstanding cocktails as well.

And with some trial and error, I have outdone those expensive restaurant drinks. My latest creation is what I named the Sunshine Cocktail because it’s such a happy vibrant color and has flavor to make.

Alizé, a French liqueur made with premium French vodka, passion fruit nectar and other exotic flavors, inspired me. As soon as I saw the bottle, I couldn’t wait to make a recipe. It’s so glamorous and sophisticated, and created a drink with those qualities as well.

My test of liqueurs is being able to drink them straight with ease, and this is so awesome on its own. It’s one of the smoothest liqueurs I’ve ever tried and that sweetness from the passion fruit shines through without being overpowering.

This means that it mixed perfectly in my drink as well, paired simply with fresh orange juice, a little champagne, and a couple sliced strawberries. Whether you want to serve it at a party, sit outside on a warm summer evening, or even have this as a fun brunch drink, you have to make it.

Since health and fitness is important to me, hydration is as well. I can’t feel good, perform at my best, and stay healthy without making sure my body is fully hydrated at all times.

It can be hard to do this, though, so I have some tips for you that will make keeping hydrated easy and fun. I promise!

How to Stay Hydrated

Make sure you grab a bottle of water or two to keep with you all day long. Then when you’re thirsty you have something healthy to turn to.

4. Add fun mix ins to water. Let’s face it, water can be boring, but it’s easy to jazz up with your favorite fruit, especially in the summer. I love adding peaches, berries, even cucumber, and of course lemon, which is such a classic. This way I never get tired of water because it always tastes different.

5. Drink before you’re thirsty. We’ve all heard people say it, but once you’re thirsty you’re already dehydrated. It’s important to drink throughout the day, and hydrate a little extra if you’re working out. I always have a bottle of smartwater or vitaminwater near me so that I can keep my body feeling hydrated all day long.

You may not know this about me, but I don’t really like going on vacation. Sure it sounds like fun. I’ll try that restaurant. And visit that store. And walk along the beach. And. And. And …

But in reality I don’t really like long car trips and I can’t stand flying. Hotels kind of freak me out and the pressure of being on vacation and feeling like I have to be on the go at all times makes me tired just thinking about it.

That doesn’t mean I don’t like a day off every now and then. It doesn’t happen much. Believe me, I wish it happened more. A lot more. When I have the chance and the time, I like to take a vacation right in my own area.

This spring has been just beautiful with lots of warm, sunny days. It reminds me how much I absolutely love this time of year after the long, cold, snowy winter.

But spring can be full of rain too, like the past few days. We had so much rain on Mother’s Day and now we’re waiting for a line of thunderstorms to come through. Storms always make me so nervous.

Rain is a good thing though, as it keeps all the plants and flowers green, blooming, and happy. In order to keep me happy and not a bundle of nerves every time lightning strikes or thunder booms, I love having movie nights in. in fact, sometimes even when it’s nice out, I can’t help but pop a Blu-ray in, grab some snacks, and a nice drink and call it a night.

Some of my favorite nights are simple movie nights at home, chilling in my track suit and fluffy slippers. Sure, it’s fun to get dressed up and go out, but it’s equally as fun to take some me time when I’ve had a busy week.

I picked out a couple of my go to movies. I love a good romantic comedy! If only love was like in the movies, but I digress …

And threw in some of my favorite snacks. I am a gummy worm addict. These actually came from a giant six pound bag from our local warehouse store. And yes I eat them all … just not at one time 🙂

I was so excited to try out Ribera y Rueda wine to accompany my comfy clothes, girly movies, and fun snacks. I chose the Ribera Tempranillo for my movie night this time. We all know gummy worms and bears pair best with red wine, right? It also works with the bold flavor of the blueberries.

The Tempranillo is bold, rugged, and ripe. The grapes are grown in Spain, not too far from Madrid, where the summers are hot and the winters are cold. That, along with a rocky, rigid terrain, makes for the perfect place to grow these grapes.

In fact, they’ve been growing grapes there for over 2000 years and cultivate what’s new and what’s next in every vineyard and vintage they produce.

Ribera y Rueda wines are perfect for all occasions; that’s actually my favorite thing about them. I loved it for my movie night, but it’s also perfect for entertaining, to go alongside a gourmet dinner, or to sit outside and drink while watching the sunset.

Personally, I’m pretty excited to pop open the Rueda Verdejo, which is bright, crisp, and best served chilled, as the weather gets warmer for a refreshing drink. What do you think I should pair with it? Gummy fruit slices 😉

When I was nine or ten, I became obsessed with coffee.  Perhaps it was a symptom of my deep seeded desire to be an adult or just wanting the warm comfort so many people seemed to enjoy.  Don’t get me wrong, I wasn’t chugging the Folgers from the coffee maker Dad so enjoyed, nor was I drinking the French vanilla from the grocery store that didn’t taste a bit like vanilla.

I loved the sugary, milky drinks from fancy coffee shops that for the most part didn’t taste like coffee in the slightest.  While Starbucks would do in a pinch, The Coffee Beanery was my favorite.

At first, I was only allowed a taste or two of white chocolate mocha or peppermint mocha, my favorites.  Soon I got to enjoy a beverage all my own, whether with a baby sitter as an after school treat or with Mom and Dad as a weekend reward.

Before long, in addition to those warm drinks, I fell in love with Frappuccinos, especially the Vanilla Bean one.  It tasted just like a milkshake!  Those drinks and the special times with friends and family they helped create remain fond memories.  However, by the time high school rolled around, my fascination had ended.  For whatever reason, my coffee days were over.

Sometimes I still crave a warm, comforting drink, especially during this cold winter.  I couldn’t think of a better recreation than White Hot Chocolate.  The perfect recipe to serve two, Mom and I sat down to our mugs full of happiness after making this dangerously easy recipe.  The steaming hot milk is wonderfully flavored with sweet, rich white chocolate and some vanilla bean paste.  I love seeing the little vanilla bean specks!  A few pink peppermint marshmallows make this the perfect way to celebrate Valentine’s Day!

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Yield: 2 drinks

Ingredients

4 cups milk (I used almond, but any kind will work)

1 cup white chocolate chips

1 teaspoon vanilla bean paste

Marshmallows, for serving

Instructions

In a large saucepan, combine milk and white chocolate over medium heat. Cook, stirring constantly, until the milk is hot and all of the chocolate has melted. Stir in the vanilla bean paste. Remove from the heat.

Divide between two mugs and top with marshmallows, if desired. Serve immediately.
