Frozen Peach Margaritas #SundaySupper

One of my favorite things about where we live is all the wildlife around us.  Birds, squirrels, skunks, ducks, deer, frogs, dragonflies, butterflies.  Every day our walk and a glance out the window is a new adventure that brings a smile to our faces no matter what else is going on.

My favorite is probably the groundhog.  Though I hate to play favorites, because they’re all adorable.  We’ve even had baby groundhogs.  If you’ve never seen baby groundhogs, you need to Google it.  So.  Freaking.  Cute.

We hadn’t seen any groundhogs in awhile, but just recently one popped out of its favorite hole in our neighbor’s front yard.  It’s kind of small and adorable and everything that is good about the world.

But not according to our neighbor.

Don’t get me wrong, though we aren’t exactly close with any of our neighbors, most of them are decent people trying to do their best just like us, including this neighbor.

And I realize some people see groundhogs as pests instead of joy.

But to fill the groundhog hole with giant sticks isn’t really cool in my book.

In fact, I’ve been upset about it all this week.  Like all week.  Every time I look at the hole and see the sticks instead of the groundhog, it breaks my heart.  I want to see the groundhog and I don’t want to live in a world in which people are mean to each other on social media and cut each other off on the highway in a constant hurry and place sticks in an innocent animal’s house.

Dad said he will remove them, we’re just waiting for the perfect moment aka when they’re not home.  #sorrynotsorry

As a reward for Dad and a pick me up for me, I made Frozen Peach Margaritas.  I knew I wanted to make them for this beverage themed Sunday Supper, but I had no idea they would turn out this good.

You have to make these margaritas this summer.  YOU HAVE TO!  They are icy cold and frozen and gluten free and kind of sort of healthy since a huge portion of them is fresh fruit. Win!  Really, though, four ingredients and a super high-powered blender kind of create magic, and real-life magic whether in the form of groundhogs and butterflies or margaritas and cake is the best kind.

Frozen Peach Margaritas #SundaySupper

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: About 5 margaritas

Ingredients

¼ cup Grand Marnier
1 cup tequila (I used Sauza because Justin Timberlake <3)
½ cup freshly squeezed orange juice
6-7 cups frozen peaches

Instructions

  1. Thaw the peaches slightly either on the counter for a good 30 minutes or in the microwave in 1 minute increments until they easily break apart but are still mostly frozen.
  2. Place the Grand Marnier, tequila, and orange juice in a high-powered blender. Add the peaches.
  3. Blend for about 1 minute until there are no large pieces of peach left. If you have a Vitamix, you will need the tamper.
  4. Serve immediately!
