Confetti Cookie Pie + Giveaway!

Ingredients

  • 2 1/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 sticks unsalted butter, room temperature
  • 1 1/4 cup granulated sugar
  • 1 tablespoon vanilla bean paste
  • 1 large egg
  • 1 cup white chocolate chips
  • 1/2 cup rainbow sprinkles

Instructions

  1. Preheat oven to 375 degrees F. Butter a pie pan.
  2. In a medium bowl, stir together flour, cornstarch, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar using a hand or stand mixer on medium speed until light and fluffy, about 2 minutes. Add vanilla bean paste and egg and continue beating on medium for about 5 minutes more, scraping down the bowl as needed.
  4. With the mixer on low, beat in the flour mixture until just combined. Stir in the white chocolate chips and sprinkles by hand until distributed.
  5. Bake 20-22 minutes. The edges should be golden brown and the center barely set. Allow to cool completely in pan. Pie may be stored in an airtight container at room temperature for up to 3 days, or frozen in pieces, wrapped in parchment and foil and placed in a zipper bag. Thaw at room temperature about an hour.
