I just looked at the calendar and realized June is halfway over. How is that possible? I swear I blink and a week passes. I take a deep breath and a month is gone. I don’t even want to talk about what happens if I take a few minutes to just read a book or, gasp, do nothing.
Summer hasn’t even technically started yet, but I feel like it’s slipping through my fingers. And I don’t want that to happen. I’m already dreading the coming of fall and then winter. But I don’t want to talk about that, because if I don’t, maybe it won’t come.
You know I love to cook. But since I’ve been trying to enjoy summer, take pleasure in the here and now, I’ve been making really easy meals. I don’t want to spend hours in the kitchen making a meal and cleaning up. Instead, I want to enjoy my meals and life.
Compromising on taste or quality is not an option though. I refuse to let my taste buds suffer just because I want to take an extra-long walk or go to another concert.

And me. See, I have this thing where I don’t eat enough protein. It’s just not something I crave a lot. Give me all the fruit and vegetables in the world, but my body needs more than that. I have fallen in love with the Marketplace Sweet and Spicy Korean Style Beef. It is one of the new protein packed options that also happens to be gluten free.
The first thing that hit me was the smell. I felt like I was at a restaurant with the intoxicating scent wafting through the kitchen, drawing me in as the meal cooked. Then I took a taste. It totally surpassed my frozen meal expectations. It has the right balance of flavors with tender beef. It must be hard to make sure the meat stays super tender. I added some kale chips and I was satisfied.
There’s also the Vermont White Cheddar Mac and Cheese. It features organic pasta, and is a taste of pure comfort with the creamy sauce and punch of flavor. I paired it with a quick salad and dinner was served.
I can’t wait to try more of the new meals, which I picked up at Walmart. They have cut my kitchen time down, but leave me feeling satisfied and like I’ve made a good choice for both my taste buds and my body. I haven’t had a Lean Cuisine since forever. Or any frozen meal, for that matter. But back when time was limited and we needed something to eat ASAP, we always enjoyed them. Really good flavors, not too full of calories or salt. Thanks for the heads up about what they’re doing now!
