I don’t know about you, but after the crazy winter we had I am relishing in every moment this summer has to offer. It’s so important to spend time enjoying sunshine, life, and friends. Before we know it, snow will be filling the ground again and we’ll be cooped up inside. After searching our schedules and finally finding a day that worked for all of us, my friends came over for a Fiesta Burger Bar featuring my favorite MorningStar Farms product: the Spicy Black Bean Burger. The thing about spending time with friends is that it usually revolves around food. Unhealthy food. I take healthy eating and fitness very seriously and don’t want to start packing on the pounds just because I want to see my friends. MorningStar Farms Spicy Black Bean Burgers

The star of the evening was definitely the Spicy Black Bean Burgers. I love how I can see pieces of corn and black beans in them! MorningStar Farms products, including these burgers, make it easy to eat vegetarian whether that is part of your everyday life or only one or two days a week. I am not a vegetarian, but I eat meatless meals at least two or three days a week. Because I often get bored with my meals (who doesn’t?), I rely on all the different varieties of MorningStar Farms products to mix up my meals. Plus, they’re always introducing new flavors like Roasted Garlic & Quinoa Burgers, Buffalo Chik Patties, Parmesan Garlic Wings, Mediterranean Chickpea Pizza, and Baja Black Bean Pizza. I searched for those Roasted Garlic & Quinoa Burgers but couldn’t find them. I hope they’re in my local grocery store soon – they sound sooooo good! Plus, they are vegan and certified non-GMO. Yay! When I eat meatless, I definitely struggle to get enough protein into my diet. But all MorningStar Farms veggie burgers are a good source of protein, so I don’t have to worry. And making them even better for summer, the burgers can be prepared right on the grill! Don’t worry, if you’re like me and don’t have a grill, they are awesome cooked in the microwave too. I love to melt cheese on mine in the microwave too! In addition to the burgers and gooey, melty cheese, I provided my guests with tomato slices, onions, avocado, cilantro, Sriracha, mayonnaise, sliced bread, and vegetable chips. I loved the idea of creating a Mexican inspired, guacamole-esque sandwich with creamy avocado, crunchy onion, juicy tomato, flavorful cilantro, and spicy Sriracha. It tasted even better than I thought when all those flavors and textures combined with the burger. I even skipped the bread to reduce calories and did not miss it one bit! You can have whatever toppings you like for your burger bar. Try parsley if you’re not a fan of cilantro. A variety of cheeses could mix things up. Some pickles, mustard, ketchup, or even MorningStar Farms Veggie Bacon Strips could be an awesome addition. My favorite thing about this burger bar is that it can have whatever toppings you want. It’s your creation. That’s also the great thing about MorningStar Farms. They have more than 30 products and 600 recipes.
