- 8 all beef hot dogs (Dad picked up Nathan’s and they were a hit)
- 8 frozen pancakes or waffles or a mixture
- 8 slices cheese (I used Gouda)
- 1 ½ cups egg substitute
Instructions
- Preheat the oven to 400 degrees F. Slice each hot dog down the center, but do not cut all the way through. Arrange the hot dogs on a foil lined tray. Bake for about 15 minutes, until slightly crispy.
- Divide the egg substitute equally among two microwave safe bowls. Cook for 2-3 minutes in the microwave on high until puffy and just cooked through.
- Cook the pancakes and/or waffles according to the manufacturer’s instructions. Top each cooked waffle or pancake with a slice of cheese, and a hot dog. Cut the microwave omelets into pieces and place on top of the hot dogs. Serve immediately or store in the refrigerator in an airtight container for up to 3 days. Tacos may also be frozen, wrapped in plastic and foil and placed in a zipper bag for up to 3 months. Reheat in the microwave for 1-2 minutes.
