This week I began submitting my latest novel to agents.
I’m guessing most of you don’t know what that entails (lucky you!), so I’ll give you the basics. After writing, reading, revising, getting feedback from Mom and her red pen, and revising again, my novel is ready to go out. Fatigued by the whole process, I am not quite done with my last pass but I wanted to get the ball rolling, so I went ahead and sent out letters. #rebelwriter
I have a basic letter I use to send to all agents, but I do personalize them all. I choose agents to submit to based on their likes and sometimes the other authors they represent. In each letter, I try to connect with them, noting what about my novel and/or me they may appreciate.
Each agent’s requirements are different. Some want five pages of my novel or ten pages or three chapters. Some also want a synopsis.
Synopsis writing is definitely not my thing. It is oh so hard to condense an 84,000 word novel into two pages. Oh so hard.
Then it’s a lot of copying and pasting and trying desperately not to make mistakes.
Oh, and after that it’s a lot of waiting. Imagine sending out 50, 60, 70 emails and hearing back from few, if any of them. If one or two of the responses is positive I will be incredibly lucky and jump for joy. You’ll probably hear my screams of delight from wherever you are.
Doing this for about ten years, I haven’t had a positive response yet. After making connections and hearing what a good writer I am from agents who wouldn’t sign me, if I don’t get a positive response this time, I’m not sure where it leaves me.
Perhaps that’s why this time submitting and this week in particular (just ask Mom) have been very difficult. I am emotionally drained and fearing I will be passed up again. Wish me luck!
To cope, I definitely enjoyed these Maple Almond Ice Cream Sandwiches. They start with super easy Paleo cookies that I could make with my eyes closed. Then I topped them with Humphrey Slocomb ice cream I ordered from Goldbely. I enjoyed the Cinnamon Tres Leches, but the Secret Breakfast was the real star.
And, yes, if you’re wondering, I did eat one for breakfast. It’s been that kind of week.
To top things off, I dipped half the sandwich in homemade magic shell and chopped almonds. If you want to keep these strictly Paleo, feel free to skip the fancy ice cream and go for some banana nice cream.
Maybe all I need is some dry ice and a cooler and I can land an agent by sending them some of these ice cream sandwiches 😉
PrintMaple Almond Ice Cream Sandwiches #SundaySupper
- Total Time: 27 minutes
- Yield: 7 sandwiches 1x
Ingredients
- 2 cups finely ground, blanched almond flour (I used Bob’s Red Mill)
- ½ teaspoon baking powder
- 1/3 cup pure maple syrup
- 2 teaspoons vanilla extract
- 1 pint ice cream of choice
- ¼ cup coconut oil, melted
- 2 tablespoons carob or cocoa powder
- ½ cup almonds, chopped
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a medium bowl, stir together almond flour and baking powder. Stir in maple syrup and vanilla extract until a sticky dough forms. Drop tablespoon sized balls on the prepared tray and flatten the cookies slightly with your hand.
- Bake about 12 minutes until lightly golden brown.
- When cool, top half of the cookies with a scoop of ice cream and top with the remaining cookies. Freeze for about an hour until firm.
- Stir carob or cocoa powder into the melted coconut oil until a drizzly consistency is formed. If it’s too thin, add a little more powder. Dip half of the frozen sandwiches into the chocolate mixture and then immediately into the chopped almonds.
- Return to the freezer until set. Serve immediately or store in the freezer, wrapped in foil and parchment, and placed in a zipper bag for up to 3 months.
