Paleo Blueberry Thyme Jam

  • Total Time: 30 minutes


  • 6 cups blueberries, picked over for stems
  • ¾ cup honey
  • 4 sprigs thyme
  • 1 lemon


  1. Place blueberries, honey, and thyme in a large pot. Squeeze the juice from the lemon into the pot, being careful to catch any seeds. Add the squeezed lemon halves to the pot. Bring to a boil over medium high heat. Cook for about 20 minutes at a pretty full boil, stirring frequently, until it thickens slightly.
  2. Pour into a heatproof container and cool for about an hour at room temperature before refrigerating. Jam may be stored in an airtight container in the refrigerator for up to 2 weeks.
