Paleo Lemon Curd

  • Total Time: 10 minutes


  • 4 egg yolks
  • Zest of 2 lemons
  • ¼ cup honey
  • 1/3 cup lemon juice
  • ½ cup coconut manna aka coconut butter


  1. Place all ingredients in a small saucepan over medium low heat. Cook, stirring or whisking constantly until the mixture begins to bubble and thickens slightly, about 5 minutes. Pour into a heatproof bowl and allow to cool about 30 minutes. Cover with plastic wrap, putting the plastic directly on top of the curd, and refrigerate. Curd may be stored in the refrigerator for up to 1 week.
