Peanut Butter and Jelly Granola Bars #SundaySupper

  • ¾ cup creamy peanut butter
  • ½ cup honey
  • 1 tablespoon vanilla bean paste
  • 1 ½ cups quick cooking oats (gluten free, if necessary)
  • 1 ½ cups Fruity Pebbles
  • ½ cup dried blueberries
  • ½ cup peanut butter chips


  1. Line an 8 inch square pan with parchment. Set aside.
  2. In a large microwave safe bowl, add peanut butter and honey. Microwave on high for 1 minute. Stir and microwave on high an additional minute. The mixture should be bubbling; if it is not, microwave an additional 30 seconds. Stir in the vanilla.
  3. Add oats and Pebbles and stir until fully coated. Add blueberries and peanut butter chips and stir until evenly distributed. Pour the mixture into the prepared pan and press down firmly. Refrigerate for about 2 hours to firm before cutting into bars.
  4. Bars may be stored in an airtight container in the refrigerator for up to 5 days or frozen, wrapped individually in parchment and foil and placed in a zipper bag for up 6 months. Thaw at room temperature about 1 hour or in the microwave about 30 seconds.
