- 2 cups gluten free oat flour
- 1 cup almond meal
- 2 tablespoons granulate sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- 2/3 cup creamy peanut butter
- 2/3 cup honey
- ¼ cup chopped pecans
- ¼ cup pumpkin spice chips
Instructions
- Line a baking sheet with parchment. Set aside.
- In a large microwave safe bowl, melt peanut butter and honey for 1 minute. Stir and microwave and additional 30 – 60 seconds, until fully melted.
- Add oat flour, almond meal, sugar, cinnamon, ginger, and cloves. Stir to combine fully.
- Add pecans and chips. Stir until distributed. Chips may melt a little – that’s okay.
- Grab about golf ball sized portions of dough and roll them into balls. Place on the prepared tray. Once all the dough has been used refrigerate 30 minutes to set.
- Bites may be stored in an airtight container in the refrigerator for up to 1 week or in the freezer, wrapped in parchment and foil and placed in a zipper bag for up to 3 months. Thaw at room temperature for about an hour.
