Pumpkin Spice Energy Bites

  • 2 cups gluten free oat flour
  • 1 cup almond meal
  • 2 tablespoons granulate sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • 2/3 cup creamy peanut butter
  • 2/3 cup honey
  • ¼ cup chopped pecans
  • ¼ cup pumpkin spice chips


  1. Line a baking sheet with parchment. Set aside.
  2. In a large microwave safe bowl, melt peanut butter and honey for 1 minute. Stir and microwave and additional 30 – 60 seconds, until fully melted.
  3. Add oat flour, almond meal, sugar, cinnamon, ginger, and cloves. Stir to combine fully.
  4. Add pecans and chips. Stir until distributed. Chips may melt a little – that’s okay.
  5. Grab about golf ball sized portions of dough and roll them into balls. Place on the prepared tray. Once all the dough has been used refrigerate 30 minutes to set.
  6. Bites may be stored in an airtight container in the refrigerator for up to 1 week or in the freezer, wrapped in parchment and foil and placed in a zipper bag for up to 3 months. Thaw at room temperature for about an hour.
