Rich Carob Powder Brownies

  • 1 ¼ sticks unsalted butter
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • ¾ cup plus 2 tablespoons carob powder
  • ½ teaspoon salt, optional
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • ½ cup all-purpose flour


  1. Preheat oven to 325 degrees F. Line an 8 inch square baking pan with parchment paper, leaving enough overhang to pull the brownies out later.
  2. In a large microwave safe bowl, combine butter, sugars, carob powder, and salt, if using. Microwave in 30 second increments, stirring in between until the butter is melted and the ingredients are all well incorporated upon stirring. Allow it to cool about 5 minutes. Then add the vanilla and stir. Add the eggs one at a time, stirring in between until fully incorporated. Add the flour and stir until just combined. Do not over mix.
  3. Pour batter into prepared pan and bake 30-35 minutes, until a toothpick inserted in the center comes out with a few moist crumbs and the brownies are set. These are best served warm out of the oven, but may be stored in an airtight container at room temperature for up to 3 days.
