  • 1 large onion, diced
  • ½ jalapeno pepper, minced
  • ½ poblano pepper, minced
  • 2 large tomatoes, diced
  • 1 large zucchini, diced
  • 1 teaspoon freshly ground black pepper
  • ¼ teaspoon kosher salt
  • 2 tablespoons apple cider vinegar
  • Lettuce or tortillas, for serving

Instructions

  1. Place the watermelon, onion, peppers, tomatoes, and zucchini in a bowl and stir to combine. Sprinkle with pepper and salt and drizzle with vinegar. Stir and serve with the salmon on your vessel of choice.
