- 2 1 inch thick slices of pineapple, peeled, cored, and sliced
- 1 mango, cut off the seed, peeled, and diced
- 1 cup cherry tomatoes, halved
- 1 jalapeno, seeded, minced
- 1 red onion, diced
- 1 English cucumber, peeled and diced
- Juice of 1 lemon
- 1 teaspoon freshly ground black pepper
- Salt to taste, optional
Instructions
- In a large bowl, stir together pineapple, mango, tomatoes, jalapeno, onion, and cucumber. Add the lemon juice, pepper, and salt, if using. Stir to combine. Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
