Vegetarian “Cheeseburger” Nachos

Ingredients

  • 1 tablespoon olive oil
  • 2 cups BeyondMeat Beefy Crumbles
  • Corn tortilla chips
  • Sliced or grated Colby Jack cheese
  • 3 tomatoes, cut into wedges
  • 2 pickles, sliced
  • Ketchup
  • Mustard

Instructions

  1. Preheat a medium skillet over medium heat. When warm, add the oil and then the Crumbles. Cook, stirring frequently, until heated through.
  2. Place the corn tortilla chips on a large, microwave-safe plate or serving platter. Top with the heated Crumbles. Place cheese in an even layer over Crumbles. Microwave the plate for about 1 minute until the cheese is fully melted.
  3. Arrange tomatoes around the plate. Top with pickles. Drizzle ketchup and mustard over nachos. Top with any additional or alternate toppings you desire. Serve immediately.
