Mom loves to write poems. She used to create them each time one of her colleagues retired from or moved on from her work. I, on the other hand, cannot write a poem to save my life. While I love to write, I don’t particularly enjoy writing poems at all. I’m also not good at it; Mom used to help me write them whenever my school assignments required doing so. But since today is Mother’s Day, I thought I would write a poem for Mom. I wanted it to be a surprise, so she didn’t help me. It’s not the best poem ever (more like one of the worst?), and won’t be winning any awards, but I hope it shows a little of the love I have for Mom! Happy Mother’s Day!
I love my mom
Because she’s the bomb
She buys me lots of awesome things
Though sometimes I have to ask her not to sing
Don’t mess with her – she’s one tough lady
She always protects me. So glad I’ll always be her baby
She might not know which button is pause and which is play
But I love watching movies with her any day
Lots of people say we look the same
That’s okay with me – she’s a pretty dame
She gives me advice
And doesn’t mind if I take the bigger slice
She never complains about doing the dishes
Or helping me with all my wishes
My mom really is the best
Even when her eyes are taking “a rest”
Love really isn’t strong enough a word
But I’ll shout it loud to be heard

To celebrate, I whipped up a batch of White Chocolate Peanut Butter Oatmeal Cookies. They were so easy to make and are possibly the best cookies I’ve ever eaten. They were a hit with Mom too! They are basically overloaded with peanut butter and white chocolate chips, which makes them completely irresistible. I recommend eating them warm out of the oven when all the chips are melty. In fact, I need to go make another batch now. It is Mother’s Day after all 🙂

- Total Time: 30 minutes
- Yield: 12 cookies 1x
Ingredients
- 1 ¼ cups all-purpose flour
- 1 cup old fashioned rolled oats
- ½ teaspoon baking soda
- ¼ teaspoon kosher salt
- 1 stick unsalted butter, melted and cooled
- ½ cup creamy peanut butter, melted and cooled
- 1 cup packed light brown sugar
- ½ cup granulated sugar
- 1 large egg, plus 1 large egg yolk
- 2 teaspoons pure vanilla extract
- 1 cup white chocolate chips
- ½ cup peanut butter chips
Instructions
- Line 2 baking sheets with parchment.
- In a medium bowl, stir together flour, oats, baking soda, and salt.
- In a large bowl, stir together butter, peanut butter, and sugars until fully combined. Add egg, egg yolk, and vanilla and mix until combined. Add flour mixture and stir just until a dough is formed. Add chips and stir until distributed.
- Using a regular sized ice cream scoop, scoop dough onto prepared pans. Refrigerate at least 1 hour and up to overnight.
- When ready to bake, preheat oven to 325 degrees F. Bake cookies for about 15 minutes, until lightly browned around the edges, but still soft in the centers. Serve warm or cool completely on trays. Cookies may be stored in an airtight container at room temperature for up to 5 days, or frozen, wrapped in parchment and foil and placed in a zipper bag, for up to 3 months. Thaw at room temperature for about an hour or in the microwave for 30 seconds.
